Dr. Felix's Famous Groundhog Brownies*
*Groundhog is a reference to the day when these are served and not a description of a major ingredient.
1½ cups all purpose flour
1/2 measuring teaspoon baking soda
1/2 measuring teaspoon salt
2/3 cup butter
1½ cups sugar
4 measuring tablespoons water
2 12-ounce packages Nestle Semi-Sweet Real Chocolate morsels
2 measuring teaspoons vanilla extract >
1/2 cup chopped nuts (optional)
This recipe is actually a double recipe. Using 1/2 of this recipe requires opening a bag of the chocolate chips and setting 1/2 aside for later and not eating. I find it easier to use a whole bag all at once, resulting in more chips for the brownies and not the cook.
Preheat oven to 325ºF. Grease or spray with Pam two 8-inch square baking pans. In a small bowl combine flour, baking soda and salt; set aside. In a small saucepan, combine butter, sugar and water. Bring just to a boil, then remove from heat. Add one package of the chocolate chips and vanilla extract. Stir until chips melt and the mixture is smooth. Transfer to a large bowl. Add eggs, one at a time, beating well after each addition. gradually blend in flour mixture. Stir in remaining package of chips. Transfer mixture to the baking pans. Add the nuts to one of the pans and stir with knife. Bake 30 to 35 minutes. (The time is quite variable and depends on the number of pans being baked and the oven being used. When done, a knife inserted into the pan should come out "clean".)
