In a review of the literature published in the New England Journal of Medicine, Dr. Theodore Kotchen (Assistant Dean for Clinical Research, Medicine – Endocrinology) notes that salt consumption in the United States is leading to higher blood pressure and higher rates of heart attack and stroke. Dr. Kotchen found that Americans ingest far higher amounts of sodium than those recommended by physicians and national guidelines.
